Audry - Menu Plan 1/19/2014

Last week recap:
Sunday we had breakfast. I cooked bacon, pancakes, and sweetened up some stewed apples with brown sugar and a little maple syrup.


On Monday the chicken-in-a-pot turned out great. I used leftovers for Tuesday night and a casserole I put in the freezer for the future. I'll post more about chicken-in-a-pot on Wednesday.

For the soup on Tuesday I used chicken, a can of cheesy soup, a can of tomatoes, can of corn, and can of black beans. I added cumin and threw in some whole wheat pasta at the end. I cooked it in the crock pot on low from lunch until dinner. Everyone ate it fine, but it wasn't rave worthy. I served it with leftover homemade bread and cornbread muffins.

Wednesday I ended up making Italian enchiladas. I served them with chocolate pudding. Don't judge.

Thursday we had three Southern Living 1981 recipes. One of them was these yummy cookies! But more on all three later.


Friday ended up being leftovers from Thursday night.

I think I did pretty good sticking to the plan!



Next week's plan:
Sunday - breakfast
Monday - baked pork chops and apple (Southern Living 1981)
Tuesday - chicken breasts in the crock-pot (probably BBQ style)
Wednesday - hamburgers
Thursday - seafood gumbo (Southern Living 1981)
Friday - pizza casserole or pick up pizza since we didn't do that last week
I might change this up depending on if I make it to the store on Sunday or Monday. I think it will be Tuesday before I go. If so, we'll have chicken on Monday.
