Spinach Recipes (Southern Living 1979)

My family likes spinach.  It's crazy in some ways, but I'll take it.  So, when Chery picked Scalloped Spinach with Cheese for us to try from Southern Living 1979, I was pretty excited to try a new version of spinach.  The recipe, of course, "had" to be tweaked when I made it last week.



Scalloped Spinach with Cheese
10 ounces of fresh spinach
1/4 cup plain Greek yogurt
1/4 cup milk
1/4 cup shredded cheddar cheese
Dash pepper
Dash onion powder

Preheat oven to 375F.
Steam fresh spinach until tender.  Spoon into a lightly greased small casserole dish.
Mix Greek yogurt and milk.  Microwave about one minute.  Stir; add cheddar cheese, pepper, and onion powder.  Stir thoroughly.  Microwave another minute.
Spoon mixture over spinach.
Bake at 375F for 15 minutes.
Kevin liked the spinach dish and said he wouldn't change anything about it.  We ate this spinach with brown sugar and garlic chicken, which Kevin didn't really like (I think using only 2 T brown sugar was the problem, oops!), and homemade Honey Oat Quick Bread, which he also liked.  I have made that bread several times always decreasing the honey to closer to 2 T, but the past couple of times I've decreased the flour to closer to 2 cups, which has helped make our bread less crumbly.

I chose the Vinaigrette Spinach as one of my three recipes from SL 1979 to try.  The kids weren't super crazy about it when we had it Tuesday night, but Kevin and I both enjoyed it.

Vinaigrette Spinach
10 ounces fresh spinach
Butter cooking spray
1/2 t minced onion
1/2 t prepared mustard
2 T vinegar
1/8 t salt
1/8 t pepper

Steam spinach until tender.
Add remaining ingredients to skillet.  Heat thoroughly.
Pour over spinach.  Serve immediately.
I served this spinach with Meatloaf Muffins, which I intended to make based on this recipe, but I ended up doing something completely different...

Gluten Free Meatloaf Muffins
1 pound ground beef
2 T Parmesan cheese
1/4 t basil
1/4 t oregano
1/16 t garlic powder
1/2 t Parsley
1 egg
1/4 cup GF Rice Chex cereal (THEN crush it)
Spaghetti sauce

Preheat oven to 450F.
Mix everything except the spaghetti sauce.
Divide mixture into at least eight "muffins".
Bake for 20 minutes.

This meatloaf version was very good.
