Sweet Potato Pie (Southern Living 1979)
I completely altered this recipe. I knew that even if the rest of us didn't like it, little Roo would. She loves anything with sweet potatoes. She has now had "some" of this pie twice. The second time she saw me pull it out, she got the all overs. It was pretty cute.
Lucky for us, everyone has liked the recipe. Little man has even requested a slice in his lunch at school.
I found this recipe from Finding Joy in my Kitchen for a whole wheat pie crust. I made it first, using all whole wheat flour, and then put it in the freezer as she recommended. Then, I started on the sweet potato pie.
My version of "Old-Fashioned Sweet Potato Pie"
2 cups cooked, mashed sweet potatoes
1/4 to 1/2 cup brown sugar
1/4 cup butter, melted
1/2 t ground ginger
1/2 t ground cinnamon
1/2 t ground nutmeg
1/8 t salt
2/3 cup plain Greek yogurt
1/2 t vanilla
1 unbaked pie crust
Combine sweet potatoes, sugar, butter, spices, and salt in a large mixing bowl. Beat until light and fluffy.
At this point, if you used the recipe above, take out the pie crust and put it into a pie plate.
Stir in Greek yogurt and vanilla to the sweet potato mixture.
Pour filling into the unbaked pie crust.
Bake at 400F for 10 minutes; reduce heat to 350F and bake an additional 45 minutes.
Cool.
Little man tried it before it was completely cooled, and he didn't really like it. I convinced him to try it again on Sunday after lunch when it had been in the fridge for more than twelve hours. He was glad I talked him into it. :-)
