Last week was CRAZY here. I've heard it called Snow Jam, Snowpocalypse, Snowmaggedon. Despite the insanity, we maintained the menu plan from last week. Due to Snow Jam, however, the sweet potatoes and chicken did NOT turn out well - cooked way too long. Other than that, we had great success. Even the Salisbury Steak with onions and red peppers was a hit. Last week, I made the cheeseburger pizza pie bundles (VERY good), so the Cheesy Chicken Cordon Bleu will make an appearance soon. I also changed my mind on the taco casserole and went with a variation of this enchilada casserole recipe.
This week... Super Bowl Sunday will throw off our "normal" routine of breakfast at dinner, but I stuck with a crock-pot lunch: one of Audry's picks for us from this month's Southern Living 1979 cookbook, "Barbecued Pot Roast", which was okay. It will be great, though, for sandwiches this week. We didn't go anywhere for the Super Bowl, but we enjoyed some "football" food of our own with Pepperoni Pizza Puffs, zucchini fries, and carrot fries.
Although for my menu plan I show a day of the week for each recipe, I may or may not stick to that day. The important thing for me is to have the meals chosen so that I purchase what I need over the weekend, and I don't waste time once we're home trying to figure out what in the world I want to make. Being a working mom, I don't tend to have time for quick trips to the store in the middle of the week and limiting myself to just five or less choices is a GOOD thing.
Monday: Since we're not having breakfast on Sunday, I'll make one of our picks from Southern Living 1979: Sausage-Cheddar Quiche (Southern Living 1979)
Tuesday: Ranch Cheddar Chicken (with homemade dry Ranch seasoning)
Wednesday: Pumpkin Macaroni and Cheese
Thursday: Baked Honey Mustard Chicken
(we've had this a couple of times before, and it's one of Little Man's
favorites. He even likes to help me prepare it because it's SO easy.)
Friday: Sour Cream Rice Bake with green beans
I made some of these applesauce muffins last night for another breakfast this week.
