I planned to make this on Monday night, but we had a family from our Sunday School class coming over for dinner. I decided to make it an "unstuffed" casserole so I wouldn't need more green peppers. It worked, kinda.
The original recipe:
What I did:
1 pound ground beef
4 green peppers
1/4 c. onion
1 17-oz can cream-style corn
1 8-oz can tomato sauce (with basil and oregano)
salt, pepper, and garlic powder
shredded cheddar cheese
I chopped the green peppers into inch-ish sized pieces. I sauteed them with the onion. I mixed in the defrosted ground beef (I buy in bulk, pre-cook, and freeze it), tomato sauce, and corn. I topped with cheese and baked it at 350 for about 45 minutes.

I thought it was pretty good and I would do it again. The boys hated it, of course. The Hubs added some seasoning mix from the pantry to make it edible for himself. Our friend who came over said her 17 year old son loved it. But...he's a 17 year old boy. I hear they eat anything. We'll see if the same thing happens when Junior and J-Boy hit the teens!
If I make this one again, I'll add some more seasonings to the mix and not bake it as long. Probably just 20 ish minutes at 375.
