Pancakes with Fruit Topping (Southern Living 1981)

 
This was my contribution to our sisters' breakfast for dinner at the beach. Oh how I miss the beach. And the extended time with Mom and Dad, sisters, nieces, nephew, and...oh yeah, brothers-in-law. We had a blast. I would LOVE to go back. Not only was it a wonderful week, but the weather is actually pretty nice there now...whereas we were there in the dead of winter. But that's neither here nor there. 

On to breakfast!

I really royally messed this recipe up. Lindy's kids still ate it well (of course. I'm jealous of her good eaters), and I really liked it with the addition of Lindy's strawberry butter (+ melted in the microwave).

Like I said...royally. messed. up. I decided to triple the recipe because of our crowd. Or was it quadruple? I don't remember now. I think that was the beginning of my woes with these pancakes.

First of all, I didn't have biscuit mix. I'd planned to make it myself, but then forgot my coconut oil (which was going to be my "fat" for my make at home biscuit mix). I used melted butter instead. No worries there. Second...no 100% natural cereal.  PS cereal on an island costs $39,457,349,509.99. So...no buying cereal either. I figured no big deal, I'd add more flour. Yes big deal. 

Hi! See me in the bowl? If I'd noticed myself I would have smiled. :)

I ended up having to add about a gallon of milk to make it slightly pancake-able. 


Now we're getting somewhere!

Here are some of the pancakes on the griddle. Half cooked is as close to a final product picture as we're going to get here. Sorry about that! 

The pancakes were okay - we didn't have to throw any away...and that says a lot! Most were enjoyed with the addition of Lindy's strawberry butter...without which I'm sure we wouldn't have eaten them all. 
If I repeat this recipe, I will follow the directions! It's certainly worth trying. :)
