Lindy - Menu Plan Week of 1/12/2014

I saw a blog post a couple of months ago for an Asian Pork Tenderloin, where the blogger recommended preparing two tenderloins, cooking one and freezing the other for another meal at a later time.  I pulled the pork tenderloin out of the freezer Sunday morning when we woke up and put it into the crock-pot for a little more than six hours on low.  It was well done by the time we got home for lunch, but it was still very good.  We ate it with steamed green peas.

Typically, Sunday nights are breakfast for dinner at our house, so I made Coffee Cake Muffins that Chery challenged me to make from SL 79.  I also made Yam Muffins from the cookbook.  The muffins were served with steamed apples and eggs.  Check out the changed recipes in this post.

Chicken Enchilada Bake (I will make up a recipe)

Friday
Kevin says that he would like to cook one day, but he hasn't decided yet what to cook.  We'll see.  If he doesn't, we'll have leftovers.
