Sausage-Cheddar Quiche (Southern Living 1979)

This pick from the February section of the Southern Living 1979 was Kevin's.  Unfortunately for him, he didn't get to try it on the evening it was made.  Stinks for him, because he chose really well.  This quiche was delicious.  However, it did take some time to prepare.  It won't be another weeknight dinner for sure, but I could easily see this on a Sunday night for breakfast. 

I didn't tweak much from the original recipe.  I did make a pie crust.  When I looked at this recipe, I was amazed, surprised, taken aback at the preparation of the pie crust.  Aluminum foil and dry beans? This article helped me understand the reasoning behind the method for preparing this quiche's crust.  I knew I would rather have a homemade whole wheat pie crust than a store bought pie crust, so I used the same pie crust I made for our sweet potato pie.  This time the crust turned out much better.  Only thing I did differently was to not leave it in the freezer too long.  The recipe says 10 minutes.  I know I left it longer when I made the sweet potato pie.  I left it in for only seven minutes or so this time.  Since I made my own pie crust and had no dry beans or peas in the house, I decided to take my chances and not use the "dry beans" directions in the original recipe.  My crust did not bubble - at least this time.  :-)


Sausage-Cheddar Quiche
Whole wheat pie crust
9+ ounce box Turkey sausage
1/3 cup chopped onion
1 t parsley
1/4 t basil
Dash garlic powder
1/4 t salt
1-1/2 cups shredded Cheddar cheese (I used mild this time)
1 cup lowfat milk
2 eggs

Prepare pie crust according to SnoWhite's directions, including freezer time for about seven to eight minutes.  Bake at 400 for about eight minutes.
Brown turkey sausage and chop / cut in the skillet.  I used the spatula.
Add the onion after the turkey is browned.  Saute for a minute or two.  Then add parsley, basil, garlic powder, and salt.  Mix well.  Pour into prepared pie crust.
Top with the cheddar cheese.
Beat milk and eggs together until foamy.  Pour over cheese evenly.
Bake at 400F for about 35 minutes or until cheese is lightly browned and quiche is set.

Little man had seconds, and he and Little Miss wanted it for their breakfasts the next morning!
