Sour Cream Shrimp Curry (Southern Living, 1980)

Hooray!  A Redemption dinner!!  4 Stars for this one - it was a winner for both me and the hubs.  And of course, Mia liked the remnants of this one (but then, she usually does).

On page 83, Southern Living has the following:



And really, other than changing chicken for shrimp, I really didn't change too much... 

Sour Cream Chicken Curry
1/3 cup chopped onion
1/2 cup chopped pepper
1 clove garlic, minced
1 tbls melted butter
1 cup sour cream
2 chicken breast, cooked and chopped
1 1/2 tbls curry powder
1 tsp crushed red pepper
dash of salt
dash of pepper
Hot cooked rice

Saute onion, pepper and garlic in butter until tender.  Add remaining ingredients except rice; cook over low heat until thoroughly, stirring often, until heated.  Serve over rice.



It was wonderful!!  To quote Chris, this one was right in our wheel house.  We did increase the curry.  We like curry and the teaspoon just didn't seem to be enough.  I included crushed red pepper - I like a little heat.  Y'all, this was good!!  We needed a winner after our disaster last week - it worked.  It was really easy to make and no complaints out of the hubs on this one.  We may even make this one again.  And for us, that is a huge endorsement!
