Lindy - Menu Plan 2/9/2014

I have seen several recipes lately for steel cut oats in the crock-pot.  I think I'll give this one a try one morning this week:  Steel Cut Oats.

Before we left for church on Sunday, I put a whole chicken in the crock-pot.  I've made this recipe before, and I enjoy getting to have the leftovers for a meal or two later in the week: Crock-pot Chicken.

We are back to breakfast for dinner on Sunday night.  I found a recipe for Refrigerator Bran Muffins.  I decided to half the recipe and give it a try, since I'd chickened out of trying a very similar recipe in the January section of the Southern Living 1979.  I put less than half of the sugar that she recommended, and they still turned out good for us.  To go with the muffins, Little Man helped me make Spiced Fruit - one of Audry's picks for us from Southern Living 1979.  It was very tasty.

Last Monday night, Little Man was supposed to have P.E. Family Fun Night at school.  With the weather we had the week before, I guess the school just wasn't ready to host it, so they postponed it until tomorrow.  Problem is that it doesn't look like the weather is going to cooperate again.  I'm still planning on being able to take Little Man and the girls and just having leftovers.  However, if we're all home, then I'll make Sour Cream Rice Bake.  If not, I'll make the rice bake the following day. 

With leftover chicken from Sunday, we'll have Chicken Cream Cheese Stuffed Peppers.  Also on the menu for the week is a Cheesy Chicken Skillet Dinner from Betty Crocker's Quick and Easy Cookbook.

Friday night, we're having supper club at our house.  The plan right now is to make Spinach Lasagna from Southern Living 1979.
