Shoepeg Corn Salad (Southern Living 1981)

What I did:
I left off the pimento. (Seriously. What's with all the pimento in these recipes? Is it a 1981 thing? Is it a now thing I just don't know about? If someone can let me know, I'd appreciate it. I'm beginning feel like I need to have some on hand.) I also changed the vegetable oil for olive oil.



This was dutifully eaten by all members of the household (minus Baby Girl. Of course), but liked by none. It was kind of weird. It was probably because I used olive oil, but isn't it better for you? I think I read that somewhere. It's definitely not a recipe I plan to repeat.

    Really, with cucumber and served cold, it sounds like a pretty weird dish for February.

    It was weird. You should be telling me what a nice mom I am for giving my boys a teeny tiny taste of something they hate. :)

  3. I've been making this recipe since '81 with no modifications, except all veggies are diced. It is a family and friend's favorite. Always clean, crisp and refreshing. Stick with vegetable or canola oil. Olive oil is too heavy and upsets the balance of flavors.
