Breakfast for dinner: French toast with cooked apples
Today I also made two types of muffins to freeze for the next couple of weeks:

Spiced Apple Muffins - this time I made muffins, baked them at 375F for 18 minutes, and used 1 cup of fresh Anjou Pears rather than apples.
