Herbed Fish & Potato Bake (Southern Living, 1980)

Have I mentioned how wonderful my husband is?  He has always participated with dinner - planning, shopping, cooking and cleaning; but the Southern Living challenge has been a bit much for him.  However, on this particular Tuesday evening, I met one of my favorite friends for drinks after work and Chris cooked this dish (and had it ready for me when I got home somewhat later than I had intended). 
He did a great job, our meal was a good one.  And I am one lucky girl :0)

Southern Living has the following on page 34 of the 1980 cookbook...

Chris' Gluten Free Fish & Potato Bake
1 (10 oz) pkg frozen spinach, thawed
1 (3 oz) pkg instant mashed potatoes
1/2 cup sour cream
3 fish fillets
1 tsp Thyme
1 tsp Parsley
1 tsp Sage
2 tbls melted margarine

** Season fish with thyme, parsley & sage.  
** prepare potatoes per instructions, reducing water by 1/4 cup.  Add in spinach and sour cream.
** Place seasoned fish on top of prepared potatoes and bake at 350 for 25 - 30 minutes



It was a little too spinach-y for me, but was really good.  The fish was seasoned really well and cooked perfectly.  A good all-in-one dish.  Chris said it was easy, but I am not taking that for granted since I wasn't around for this one.  We gave this one 2 1/2 stars.
